The work is seasonal and strange. A commission means weeks in a refrigerated display case at a state fair or dairy promotion, building an armature, packing hundreds of kilos of butter onto it, and carving with warmed tools while the public watches through glass at roughly four degrees. The subject is usually agricultural royalty, a livestock scene or a public figure, and the sculptor is simultaneously an artist, a performer answering questions all day, and a technician managing a material that slumps if the compressor falters.
Automation touches the periphery. Design mock-ups can be modelled in 3D and previewed for a sponsor, which speeds up approvals. Robotic and CNC carving exists for foam and stone, and food-industry 3D printing is real — chocolate and sugar printers are commercial products. In principle a machine could extrude a butter form. In practice nobody has built one, because the annual demand is a handful of fairs and the sponsor is buying a spectacle rather than an object.
That spectacle is the reason the job holds. The audience comes to watch a person carve, ask them how many pounds it took, and photograph the half-finished cow.
