Wineries already use this for quality control, which quietly absorbs some of the fault-detection role judges once played. If judging were purely defect-finding, this job would be finished.

It isn't, because wine scores are a social technology. A medal works commercially because consumers trust that credentialed humans — Masters of Wine, certified sommeliers — tasted the thing and vouched for it. 'Character,' 'typicity,' and 'this will drink beautifully in eight years' are judgments about culture and context, not chemistry. Sensor-based chemistry is already inside winery QC labs, and through the late 2020s it will keep absorbing fault detection and consistency checks. By the mid-2030s, expect hybrid competitions where instruments screen and humans arbitrate style and character. Judging as a pure income barely exists anyway; the pressure lands on the surrounding ecosystem — critics, medals, scores — whose commercial relevance depends on consumer trust in human palates staying intact.
