And the omakase format is hospitality theater: you're paying for the conversation, the knife show, and a chef deciding what you get next based on your reactions. High-end sushi keeps commanding some of the strongest prices in dining precisely because the human is the product. The realistic career math: production and mid-tier roll jobs erode toward machine-tending, while trained itamae remain scarce, sought after, and expensive to become — the apprenticeship still takes years.
