A pâtissier laminates dough across multiple turns with rest periods, tempers chocolate to the right crystal structure, makes creams and mousses to set correctly, assembles and glazes entremets, pipes and decorates, manages proofing schedules against oven capacity, and controls waste. There is also recipe development, seasonal menu turnover, costing, ordering, hygiene compliance, and training commis who will destroy a batch of macarons before they stop destroying batches of macarons.

Automation dominates at scale. In industrial and supermarket production, largely yes, and that happened well before modern AI. Most café croissants arrive frozen and par-baked. Is pâtisserie a good trade to enter now?

It is a genuinely resilient skill, though the pay and hours have always been the real obstacle rather than technology. Can AI create good pastry recipes?

It can generate plausible flavour combinations and correctly scaled formulas quickly, which is a useful starting point for development. It cannot taste, and it cannot tell you that the texture is wrong or that the acidity needs pulling back.
