But the master's segment is live performance plus irreproducible product. Hand-pulled dough has gluten development and irregular texture that extrusion doesn't replicate, and customers queue specifically to watch the pull — the open kitchen is the marketing budget. The craft carries cultural weight too: lamian and soba traditions are heritage skills, passed master to apprentice, and diners pay for that lineage. The risk isn't replacement; it's that machine noodles normalize a lower price point and squeeze mid-tier shops. Masters with a counter, a crowd, and a reputation are insulated.
